Manual Cooking and Holding Oven. Single compartment, small capacity oven. 20 ga. S/S exterior and door with magnetic door latch. Oven equipped with 2 S/S side racks; 2 S/S wire shelves; and 1 S/S drip pan, all removable for easy cleaning. Oven is furnished with 1 external S/S drip tray with removable pan. Halo Heat®a controlled, uniform heat source that gently cooks, holds, and surrounds food for better product taste and longer holding life. Reduces product shrinkage. Induces natural enzyme action in meat for tenderization. Retains more product moisture and flavor. Provides product uniformity and consistency. Less energy usage. Reduces labor and evens-out work loads. Non-magnetic stainless steel interior, racks, and shelves resist corrosion. Stackable design for additional capacity. No hoods or vents required (most areas).
